Looking at the medium chain triglycerides found in coconut oil, when added with chia seeds, will give you the energy boost needed, especially during that 3PM slouch. You can mix one tablespoon of coconut oil with half a tablespoon of chia seeds, and either enjoy from the spoon, or spread this on sprouted grain bread. YUM.
